What gives mangoes (and apricots) their orange color?

The deep orange color of mangoes (and apricots) comes from a high content of beta carotene, an important precursor of vitamin A that’s been associated with reduced risk of some cancers. Mangoes also contain vitamin C, fiber, lutein, potassium and zeaxanthin, phytochemicals known to boost the immune system.
